Resepi ASAM PEDAS MELAKA ASLI terbaekkk...

Style Diana... heheheh...
rupher2nya ramai peminat asam pedas melaka ni ek?
jadi bagi tak menghampakan kengkawan, mak letak la resepi dia...
tapikan maaf sangat2 la kalau sukatan2 tu tak betul coz aku main campak2 je kekdahnya...


ye fuan-fuan.. ni resepi utk 2 org makan ye... :)

Bahan2nya :


4 ketul ikan pari / parang / tenggiri (dibasuh bersih)

3 biji bawang merah
1 biji bawang putih
2 cm halia
1 mangkuk cili kering kisar
3 cm belacan
2 cm kunyit hidup
1 sudu besar lada hitam (bawang merah, putih, halia, cili, belacan, kunyit n lada blend skali)

3 batang serai - dititik

1 sudu teh halba

daun kesum + bungan kantan

bendi / terung (potong la ikut patern korang suke..)

air asam jawa

garam + gula

minyak


Caranya :


Panaskan minyak....

Then masukkan halba... nampak mcm kuning2 tu then terus masukkan bahan2 yang diblend tadi... masukkan serai jugak...

Masak sampai benda blend tu garing n masak... (if my MIL, dia masak sampai merecik2 sambal tu kat dapur2 dia... nk bagi masak n garing punya pasal..)

Dah garing, masukkan gula.. agak2 ye jgn la manis sgt... masukkan daun kesum n bunga kantan..

masukkan ikan... kacau2 sket then masukkan air asam jawa....

banyaknye asam jawa tu bergantung kesukaan u all nk buat kuah tu pekat ke cair... kalau cair sgt tak sedap pulak... masam tu u all boleh agak2 jugak.. jgn sampai masam gilerrr...

then last, masukkan bendi or terung... then perasakan dengan garam... biar dia mendidih then boleh tutup api....

1. asam pedas melaka ni kalau letak belacan lagi kick.. kalau sape2 yg gatal hidung tu, jangan la letak... kang aku tak tanggung...

2. kalau nak rasa kesedapan lagi.. biar masak awal 3 @ 4 jam b4 nak makan... lagi lama lagi sedap coz baru sebati rasa dia tu...

3. lagi pekat, lagi sedap...

4. menggunakan ikan fresh, lagi terasa kesedapannya.. sampai boleh hirup itu kuah...

5. Asam pedas asli melaka ni, lepas korang dah basuh tangan walau sabun pon, bau dia masih melekat kat tangan... for sure menjadi la tuh.. hehehehe

ohhh asam pedas melaka ada bubuh halba ye, slalu klu asam pedas belah johor tak bubuh pun, tapi bau mmg lekat kat tgn, part tumis sampai garing tu - betul, wajib tuh sbb klu cili tak cukup masak nnt bole sakit perut - utk org yg perut manje la...

Asam pedas? x pnh mkn tau. but bila dah duk kat johor, kawan baik introducekan asam pedas kat Tebing Runtuh nusajaya.. fulamakkk sedap rupenye... pekat... tp dia ckp kat melaka lg sedap.. so ada plan nak ke melaka jugak nanti. bholiday n cr asam pedas.

Nak ucapkan ribuan terima kaseh. Saya cuba resepi asam pedas ini buat pertama kali dan tak henti2 pujaan dari tetamu2 saya. Saya sendiri tak dapat merasa nya sebab belum pun semua tetamu tiba asam pedas satu kuali besar selesai sudah.. terima kaseh sekali lagi..

anon - kalu takde halba ok gak.. tapi kurang wangi. sbb as i yg belajar, asam pedas melaka mmg letak halba.

gaban hitam - lada hitam nk bubuh pon boleh.. tak nak bubuh pon takpe... hmmm halba tu kecik2 kaler brown.. org masak kari ikan pakai ni gak.. cer tanye kedai kalau tak sure..
